White Penja pepper has a subtle flavour, which is sweeter and less spicy than Black Penja pepper. Penja pepper is rare. It is grown in naturally rich volcanic soil in an ideal climate and farmed using age-old techniques. It is harvested by hand, bunch by bunch, and then allowed to dry naturally. It is then graded using special sieves so that only "large" grains are retained.
White Penja pepper has an exceptional flavour. It has a wild, robust and pronounced spicy character. Grind it at the last moment to appreciate its flavour at its fullest.
It will season your meat, fish, seafood and mushrooms beautifully. It will also complement fruit desserts.
In 2013, Penja pepper was awarded the very first African Protected Geographical Indication (PGI).
