Sencha green tea is greener than most other teas. Sencha means “roasted tea” in Japanese. The enzymes contained in the freshly-picked leaves automatically trigger a natural fermentation process. To prevent this, the green tea leaves are briefly dried at a very high temperature, just after picking. The Japanese roasting method, (using steam) is much more delicate and better protects the integrity of the plant than the method traditionally used for Chinese green teas (the leaves are roasted at a very high temperature in large pans).
Sencha contains, among other things, numerous enzymes that have a positive influence on the metabolism, and the non-retention of bad fats. This is generally the case with all types of green tea, but especially to Sencha. In Asia, it is traditionally consumed chilled in the summer. Let yourself be seduced by its flavour and slight bitterness.
